Energy Breakfast/ Nibbles

Superfood is always the best option to kick off a tough day. Here, I present a couple of nice ideas to make your own energetic bars or savoury and nourishing sandwiches.

Ingredients for energetic bars:
- 50 g oatmeal
- 30 g coconut 
- 3 tbs honey/maple syrup
- ground almonds
- 10 chopped dates
- 2 tbs chia seeds.

Cook the oatmeal with some milk/water for just 10 minutes, leave it to cool and then mix all the ingredients in a bowl with the cooked oatmeal. Add some oatmeal is it's too moist. Pour the mixture in a baking tray and cook at 180 C for 15/20 minutes. They should stiffen as soon as they cool down but if they don't they are delicious even in the soft version :)

These are simple slices of rye & hemp bread topped with ripe avocado & sesame and homemade hummus.
